STEP 3 - SECOND COMBING - CREATING A CHEVRON PATTERN
The comb is drawn in the opposite direction from the first combing to create a chevron pattern. Care is taken to hold the comb straight up and down as it is moved parallel to the surface of the carrageenan. Shifting the placement comb half the distance of the teeth so the second pass occurs between the lines of the first combing creates chevrons.
